Banana pancakes (gluten-free)
•1 cup brown rice flour (optional: add buckwheat flour)
•1 tbsp aluminum-free baking powder
•1 tsp sea salt / kosher salt
•1 egg
•1 ripe banana
•Fresh berries or agave-maple syrup
Combine flour, baking powder, salt and egg in small mixing bowl slowly adding water as you mix until the batter reaches the desired consistency (should drip off the spoon). Next add the banana and mash with fork or whisk until incorporated into batter. Bring pan/griddle to medium on stove top. Cook until golden brown on each side. *Wait to add batter to pan until surface is at desired temperature. Brown rice flour (+ banana) can take slightly longer to cook through. Enjoy with fresh berries or syrup!
