Black-eyed Salsa
Black-eyed Salsa
•1 can organic black-eyed peas (drained)
•1 can organic pinto beans (drained)
•1 jar (2 oz.) diced pimentos (drained)
•1 can shoe peg corn (drained)
•1 medium red onion chopped
•1 cup celery chopped
•1 cup green pepper chopped
•1 clove fresh garlic pressed
Place the above ingredients in a bowl and set aside.
Marinade:
•1/4 cup unrefined sugar
•1/2 cup olive oil
•1/2 cup apple cider vinegar
Mix the above ingredients in a bowl and pour over salsa. Cover and let stand in refrigerator overnight. Drain excess liquid before serving.
•1 bunch fresh cilantro
•2 avocados
Add diced avocados and cilantro before serving. Salt and pepper to taste. Enjoy.
