Black-eyed Salsa

 
  1. 1 can organic black-eyed peas (drained)

  2. 1 can organic pinto beans (drained)

  3. 1 jar (2 oz.) diced pimentos (drained)

  4. 1 can shoe peg corn (drained)

  5. 1 medium red onion chopped

  6. 1 cup celery chopped

  7. 1 cup green pepper chopped

  8. 1 clove fresh garlic pressed

Place the above ingredients in a bowl and set aside.

Marinade:

  1. 1/4 cup unrefined sugar

  2. 1/2 cup olive oil

  3. 1/2 cup apple cider vinegar

Mix the above ingredients in a bowl and pour over salsa.  Cover and let stand in refrigerator overnight. Drain excess liquid before serving.

  1. 1 bunch fresh cilantro

  2. 2 avocados

  3. Add diced avocados and cilantro before serving.  Salt and pepper to taste.  Enjoy.
