California Pan Sushi
•4 cups rice
•4 cups water
•1/2 cup Japanese rice vinegar
•1/4 cup mayonnaise
•1-2 avocados, chopped
•8 ounces imitation crab, chopped
•1 jar Nori Furikake (rice seasoning)
In rice cooker, rinse and drain rice. Add water and cook. Place cooked rice in large bowl and allow to cool (still warm). Pour vinegar mixture over warm rice, mixing lightly. Line 9 X 13 X 2 inch pan with waxed paper. Spread half of rice mixture evenly in pan and pack firmly. Spread a thin layer of mayonnaise over rice. Top with a layer of crab and then avocado. Cover with remaining rice mixture and pack firmly. Sprinkle with Nori Furikake just before serving.
