Caraway slaw

 
  1. 1/3 head red cabbage, thinly sliced

  2. 1/2 head green cabbage, thinly sliced

  3. 3 carrots, grated

  4. 1 bunch green onion, finely chopped

  5. Small bunch fresh parsley, finely chopped

  6. 1 tbsp fresh horseradish, finely chopped

  7. 1 tart apple, chopped

  8. 1 1/2 tsp  dijon mustard

  9. 1 tbsp apple cider vinegar

  10. 5 tbsp extra virgin olive oil

  11. 1 tsp caraway seeds


Add all vegetables together in a large bowl.  Combine mustard, vinegar and add olive oil slowly as you wisk together until it is completely emulsified.  Pour sauce over vegetables and toss.  Chill for 30 minutes up to 2 hours and serve.
