Chipotle-style burrito bowl

 
  1. Lime rice

  2. Saute in saucepan

  3. 1/3 cube organic unsalted butter

  4. 1/2 yellow onion, finely chopped

  5. 1 clove garlic, minced

  6. Bring to boil in pot

  7. 2 cups water

  8. 4 boullion cubes

  9. 1 teaspoon cumin

  10. 1 can mild green chilies

  11. Juice of fresh lime

  12. 1/4 teaspoon pepper

  13. 1/4 teaspoon salt


Combine all ingredients in rice cooker with 4 cups rinsed white rice.  Add enough water to adequately cook rice.  Cook.  Mix in 1/4 bunch fresh cilantro and serve.


Black beans

  1. 1 can organic black beans

  2. Drain half of liquid.  Heat.  Serve.


Roasted pork

  1. Pork roast

  2. 1/3 cup raw sugar

  3. 1/3 cup worchestershire sauce

  4. 1 teaspoon dried oregano

  5. 1 teaspoon powdered ginger

  6. 1 teaspoon sea salt

  7. 1 teaspoon chili powder

  8. 2 tablespoons dried minced onion


Place roast in crock pot.  Combine all remaining ingredients and pour over roast.  Cook on low for 8-10 hours.  Shred.  Moisten with leftover juice and serve.


Fresh pico de gallo

  1. 4-5 roma tomatoes, diced

  2. 1/2 white onion, chopped

  3. 1/2 green bell pepper, chopped

  4. 1/3 bunch fresh cilantro, finely chopped

  5. Freshly ground pepper and sea salt to taste


Serve in bowl.  Layer rice, black beans, shredded meat and pico.  Top with chopped romaine lettuce.  Enjoy!
