Fajitas (easy)

 
  1. 2 free-range chicken breasts

  2. 1 can organic black or pinto beans

  3. 1 medium onion (white, yellow or red), chopped

  4. 1 bell pepper, sliced

  5. 3-4 Cremini mushrooms, sliced

  6. 1 packet organic fajita seasoning

  7. 1 bunch fresh cilantro, finely chopped

  8. 1 avocado, sliced

  9. 1 tomato, chopped

  10. Small bunch greens

  11. 1 fresh lime

  12. Ezekial tortillas (sprouted)


Cut chicken into thin strips and quickly brown on medium heat then reduce to medium-warm.  Add contents of seasoning following direction on package (pre-mix).  Warm beans in separate pot.  Saute onion, mushroom and pepper in oil (walnut, coconut, sesame) until translucent.  Combine with chicken in sauce and stir.  Warm tortillas in pan.  Serve with greens, cilantro, avocado and freshly squeezed lime juice.
