Flour-less brownies

 
  1. 1 can (15 oz.) no salt added black beans, drained and rinsed

  2. 3 large pasteur-fed eggs

  3. 1/3 cup melted butter

  4. 1/4 cup cocoa powder

  5. 1/8 teaspoon ground sea salt

  6. 2 teaspoons gluten-free vanilla extract

  7. 1/2 cup plus 2 tablespoons raw unrefined sugar

  8. 1/2 cup gluten-free semi-sweet chocolate chips

  9. 1/3 cup finely chopped walnuts


Pre-heat oven to 350 degrees.  Butter an 8-inch baking pan.  Place the black beans, eggs, melted butter, cocoa powder, salt, vanilla and sugar into the bowl of a food processor and blend until smooth.  Remove the blade and carefully stir in walnuts and chocolate chips.  Transfer mixture to the prepared pan.  Bake the brownies for 30-35 minutes, or until just set in the center.  Cool before cutting and serving.
