Mixed greens salad
•1 bunch greens of choice (spinach, arugula, romaine...)
•Walnut halves & pieces (pine nuts, almonds)
•Dried cranberries (or fresh fruit: pear, apple, peaches)
•Crumbled goat cheese
Combine handful of greens sprinkled with walnuts, cranberries and goat cheese. Top with balsamic dressing.
Balsamic vinaigrette
•2-to-1 extra virgin olive oil to balsamic vinegar
•1 clove garlic, minced
•1/2 fresh lemon juice
•Dash freshly ground salt & pepper
