Mixed greens salad

 
  1. 1 bunch greens of choice (spinach, arugula, romaine...)

  2. Walnut halves & pieces (pine nuts, almonds)

  3. Dried cranberries (or fresh fruit: pear, apple, peaches)

  4. Crumbled goat cheese


Combine handful of greens sprinkled with walnuts, cranberries and goat cheese.  Top with balsamic dressing.


Balsamic vinaigrette

  1. 2-to-1 extra virgin olive oil to balsamic vinegar

  2. 1 clove garlic, minced

  3. 1/2 fresh lemon juice

  4. Dash freshly ground salt & pepper
