Quinoa salad
•1 - 2 cups quinoa, uncooked
•1 fresh cucumber, seeded and chopped
•2 fresh medium tomatoes, seeded and chopped
•1/4 bunch fresh parsley, chopped
•1/2 fresh lemon, juiced
•1 tablespoon extra virgin olive oil
•Kosher or sea salt and black pepper
Triple rinse uncooked quinoa.
Bring double the volume of water-to-quinoa to boil, then cover and reduce to simmer until all the grain is cooked, pour off any excess liquid.
Wisk olive oil and lemon juice together with salt and pepper.
Combine chopped cucumber, tomato, parsley and quinoa with dressing. Toss and place in refrigerator to chill. Serve cool.
